Hannah Roche
Hannah has been working at Lyburn for the last year after moving from Edinburgh. In Scotland Hannah worked for I J Mellis Cheesemongers in their shops before becoming the Wholesale Representative. While with Mellis, Hannah worked on numerous cheese wedding cakes, helping to select cheeses for clients from Mellis' selection of over 90 cheeses and setting up and decorating the cakes at venues all over Scotland. While travelling Hannah worked at Monteillet Fromagerie in Washington State, America making French style goat and sheep cheese.

 

 

Paul Thomas
Paul is the cheesemaker at Lyburn Farmhouse Cheese having relocated from Edinburgh in February 2008. He is paricularly proud of Stoney Cross which has been developed since he joined he company. It has already won many awards and has a growing reputation. Paul graduated in Biochemistry in1999 and worked in a variety of jobs before becoming the Affineur at I J Mellis Cheesemongers, ensuring the quality of every cheese that they sold. His time in the wine trade has proved useful in cheese, wine & beer matching for the likes of Harviestoun Brewery and the Scottish Malt Whisky Society. Paul has a very extensive knowledge of cheese and cheesemaking and like Hannah has designed the perfect cheese wedding cake for many happy couples.
