| Old Winchester Old Winchester is a
14-16 month old washed curd gouda style cheese. There a
distinctive nuttiness to the flavour and sweet caramel
overtones in the aftertaste. It is particularly good when
eaten with ripe conference pears or fresh figs as they
compliment the slightly crunchy texture. It comes in a
4.5kg round, a minimun of 8 inches diameter. |

Lyburn
Gold Lyburn Gold, at just 3 months old, has a very butteryand fresh taste with a creamy texture. It is similar to a Dutch farmhouse gouda, has very small eyes evenly distributed throughout and comes in a 5.5 kg round, 9 inches across. It is a washed curd cheese and although it is technically a hard cheese because it has been pressed, we generally described as semi- hard. |

| Lightly
Oak Smoked This cheese is largely the same as the Gold but before we mature it it is lightly smoked over oak in Dorset. It is still a washed curd cheese but the eyes are not so prominent and it is smoother giving it a light and delicate flavour. During maturation the rind goes a glorious caramel colour that can't be mistaken for any other and is entirely natural unlike other smoked cheeses. It comes in aprox. 10 inch rounds and weighs around 5kg. |

| Garlic
and Nettle This cheese is made to the same recipe as the gold, but it is not matured for quite so long. As the name suggests, there is a hint of garlic and onion, and the other ingredients are chives,parsley,paprica, ginger, horseradish and celery, the nettle giving the cheese a touch of colour, that can be quite clearly seen. The garlic has however, not been included to such a level that it is too overpowering, and this presents a young well balanced cheese that pleases most people. |

| Stoney
Cross Stoney Cross is the new offering from Lyburn Farmhouse Cheesemakers.The cheese comes as a 1.3Kg truckle or a 3.5kg wheel, mould ripened, not dissimilar to a French Tomme De Savoie. Creamy in texture with sweet flavours, with a distinctly earthy finish a little similar to a Caerfilly but smoother in texture. This cheese has already earned at Bronze medal at the British Cheese Awards and a silver at the World Cheese Awards despite its relative infancy. |

| Barkham
Blue
Has a very distinctive appearance. Made in a 1.2kg ammonite shaped round, it is covered in an attractive natural mould ripened rustic rind. The deep yellow moist interior is spread with dark blue - green veins. It has a rich blue taste, smooth buttery texture with a melt in the mouth flavour, without the harshness associated with some blue cheese. Awarded Supreme Champion at the 2008 British Cheese Awards. |

It is a soft white cheese full of flavour, a cheese with a creamy texture, wrinkled rind and unique taste.
