Stoney Cross

Stoney Cross is our youngest offering from Lyburn Farmhouse Cheesemakers. The cheese comes as a 1Kg truckle or a 2.5Kg wheel, mould-ripened, not dissimilar to a French Tomme De Savoie. At 8 weeks old it is creamy, buttery in texture, sweet flavours, with a distinctly earthy finish. The name Stoney Cross comes from an old World War II airfield 2 miles to the South of us.

This cheese suits a very broad section of the customer. Even those that like a strong cheese will enjoy the subtle flavours and the smooth texture of this little cheese, and can be found in a number of independent stores and 60 Waitrose Stores in Central Southern England

Old Winchester

Also known as Old Smales, Old Winchester is an older version of Winchester, on a previous page. This is now a much dryer harder and crystalline cheese, becoming more reminiscent of an old gouda with a distinctive nuttiness in flavour, however it is a product of evolution and need. Because Old Winchester is made with a vegetarian rennet, on a number of occasions the cheese is being sold, and used as a vegetarian replacement for a hard Italian cheese, and yet can still be used as a table cheese, it has that bit more versatility. Some might argue that this English farmhouse cheese, is better than a hard Italian cheese, but I could not possibly comment. We try to sell them at about 18 months (16 months just at the minute) and they will average approx. 4.5kg each. The age will come and go as it is impossible to get the stock level right all the time, we are at the moment, very tight on stock, should be fine early 2020, as there is plenty in the pipeline.
