Stoney Cross

Stoney Cross is our youngest  offering from Lyburn Farmhouse Cheesemakers. Old Winchester had become very popular, and soaked up a lot of investment, being 18 months old, so we decided to make a younger cheese to support the aging Old Winchester, and improve our cash flow.

The cheese comes as a 0.8 Kg Xmas truckle or a 2.8Kg wheel, mould ripened, not dissimilar to a French Tomme De Savoie. At 8 weeks old it is creamy, buttery in texture, sweet flavours, with a distinctly earthy  finish. The name Stoney Cross comes from an old WorldWar II airfield 2 miles to the South of us, and more detail here, https://en.wikipedia.org/wiki/RAF_Stoney_Cross    I can still just remember this area in 50’s, the runways are enormous and they needed thousands of tons of concrete, with no Redimix in those days, I have no idea how they completed  the job in such a short space of time.

This cheese suits a very broad section of customer. It should be noted that until the middle of 2024 this cheese had an egg allergen warning, but this is no longer the case and is egg, (Lysozyme), free. Even those that like a strong cheese will enjoy the subtle flavours and the smooth texture of this little cheese, and it can be found in a number independent stores in and around Hampshire and 60 Waitrose Stores, south of the M4 in Central Southern England.
